What temperature should I set?
Set the oven-style air fryer to 300°F (150°C) when using a water bath; this temperature is low enough to coagulate eggs slowly without overcooking yet high enough to set within a reasonable time frame. If your unit allows both radiant and convection modes, choose the radiant/bake mode rather than full convection to reduce direct hot airflow on the custard surface, which can dry and crack it. Always verify actual internal temperature with an oven thermometer because many air fryers run hotter than their displayed setting; adjust down by 10–15°F if the thermometer shows a higher reading.
How long should I cook the custards?
Bake custards in the water bath for 30–40 minutes for 4–6 ounce ramekins; begin checking at 25 minutes for smaller portions and at 30 minutes for standard portions, looking for a slight jiggle in the center while the edges are set. Remove the custards when the center still quivers gently. Residual heat will finish setting during the cooling phase, which prevents overbaking and cracking. After removing from the oven, lift the ramekins from the water bath promptly and cool on a rack to room temperature before chilling to avoid continued carryover cooking that causes curds and cracks.
How much fan or airflow should I use and how to set the water bath?
If your air fryer lets you control the fan, use minimal or no fan (off or low) so the custards experience indirect, humid heat; excessive airflow dries the tops and promotes cracking. Place the filled ramekins in a roasting pan or baking dish, pour hot (not boiling) water into the pan until it reaches about halfway up the ramekin sides, and cover the entire pan loosely with foil to trap steam and further soften the oven atmosphere. For safety, use oven mitts when pouring hot water and when transferring the pan; ensure the water is hot enough to shorten ramp-up time but not boiling, and avoid overfilling the pan to prevent sloshing into ramekins.
